Many foodservice operators are looking for ways to engage their guests with exhibition cooking in locations where traditional overhead ventilation is impractical, or in locations where it’s desirable to have a pop-up kitchen but no cooking ventilation exists. Learn about innovative recirculating ventilation systems that can be added to existing exhibition cooking equipment and available as integral cooking solutions to work in most any location without the need for external ducting or external ventilation systems.

Bill Caruso, FFCSI (PP), FCSI The Americas Chair, Founder and Chairman of WC & Partners, Inc.

Bill is the founder and chairman of WC & Partners, a firm that provides food, beverage, laundry and solid waste facilities consulting and design services to the worldwide hospitality industry.  Founded in 1986, WC & P has grown to an international firm, with North American offices in Denver, Philadelphia, San Francisco and Scottsdale, and through a number of 2016 global alliance agreements, adding worldwide offices in Athens, Berlin, Dusseldorf, Santiago, Sao Paulo, San Salvador, and Vancouver. His project portfolio of personally completed work numbers well over 2,400 completed projects in 22 countries, over a continuous 45-year consulting career.

Scott Heim, President & CEO, Evo, Inc.

Scott has over 30 years of experience in launching new products, building brands and companies. He has held senior management roles and board positions for more than 20 years.

For the past 5 years, Scott has been the president and CEO of Evo, Inc.  He has vigorously executed a growth plan for this Oregon based food equipment company. The company began designing, manufacturing and marketing unique, circular flattop cooking griddles in 2001. Sales initially concentrated on customers in the Northwest and the west coast.  By focusing on 6 selling segments, sales at Evo increased by 55% in 2015 and increased by 28% in 2016.  While growing the original product line, his team launched an innovative commercial cooktop with self-contained ventilation.  This new product, the EVent® cooktop, won 3 product design awards and helped dramatically spark sales and generate international opportunities.
