Provide knowledge of the various cook & hold and re-thermalization heating systems available on the market, to provide a better category understanding and allow future FCSI clients to deliver meals safely and efficiently.  Also, to be covered will be the performance and cost differences between these systems and basic combi-ovens, innovative uses of cook & hold and retherm units as we progress through the COVID-19 crisis and possible applications for precision humidified cabinets for bagless Sous-Vide applications.
